A Kiss from Mum
The things we love about tea is that it’s more than just a drink; it holds memories, habits, comfort and warmth. It’s a staple on cold mornings, a vehicle for good conversation, a reminder of a loved one, and for me, co-owner of Herbal Republic, it’s a connection to my childhood and mother. In this entry, in honour of Mother’s Day, I would like to share my Mum’s recipe of our Bombay Chai. My mother made many versions of Chai, when we had colds and were sick. On cold winter afternoons, Chai with snacks and sweet goodies.

BOMBAY CHAI
Herbal Republic Bombay Chai
(Black Tea, Black Pepper pods, Ginger Root, Cloves, Cinnamon Bark
Cardamom Pods and Star Anise)
Honey to sweeten (Optional)
Milk or Cream for extra creamy version (Optional)
Add 2-4 cups of water, bring to boil over high heat. Add Bombay Chai, Simmer for a few minutes. Remove from heat. Add milk and sugar. Strain chai into teapot and serve hot. The Chai can be made with a combination of milk and water (50/50) bring to boil add, Bombay Chai tea and simmer for a few minutes. Strain chai into teapot and serve hot.
